There are few things I love more than Champagne and Christmas! Combine them and you basically have my perfect day. While I’m partial to a champagne cocktail any time of day, these Christmas Poinsettia Mimosas are perfect for sipping Christmas morning. The bright red color photographs beautifully and the flavor is light and fruity. I made about 12 different versions before settling on this one but I think it’s a winner. They are festive and bubbly with just the the right amount of sweetness.
Ingredients:
- Prosecco or Champagne
- Cran Apple Juice
- Pomegranate Juice
- Fresh Cranberries
- Sprig of fresh rosemary
Directions:
- Pour 4 oz of Prosecco into a champagne flute
- Add 2 oz of cran-apple juice
- Add a splash of pomegranate juice
- Garnish with rosemary and fresh cranberries. I like to let the rosemary sit in the glass a few minutes before serving to get the flavor infused.
These Poinsettia Mimosas are super easy to make and I think balance the Prosecco well with the sweetness of the juice. I prefer a little more Prosecco than juice but you can always adjust the quantities to your taste. Definitely a great way to celebrate Christmas morning! Cheers!
