Cinnamon Roll Keto Chaffles

A lot of you know I went back on Keto at the beginning of January and it’s been going really well- down 31lbs! I kept completely clean Keto for the first 2 months but now that I’ve hit my first big goal I’m more comfortable treating myself to some “dirty Keto” treats once in awhile. Enter these Keto Cinnamon Roll Chaffles!

One of our family rituals is yummy treats for Sunday breakfast like donuts, waffles, quick breads etc. It’s been SO hard skipping breakfast while my family eats goodies (especially when I’m the one that does the cooking)! But now that I’m at a healthier weight I feel ready to introduce a Keto friendly treat once in awhile.

I wouldn’t do these as a daily breakfast or anything but as a “once in awhile treat” I think they are a good way to indulge without derailing your diet or way of eating. I’m able to stay within my macros and still feel like I had something delicious.

The key to these is Swerve. Serve has been an absolute game changer for me. I HATE the aftertaste of artificial sweeteners and stevia so I was hesitant to try it but it really doesn’t have an after taste at all! While I wouldn’t over do it because of tummy troubles, a little bit once a week for Sunday breakfast has been nice. I’ve checked my blood glucose and ketones with my Keto Mojo and it doesn’t throw me out of Ketosis but your mileage may vary.

I put this recipe together through trial and error and honestly I usually don’t even measure the ingredients. I just toss them in a bowl and stir. So there’s nothing hard and fast about the amounts… just add what tastes right to you. You’ll also need a mini waffle iron- I LOVE my Dash one from Amazon.

Chaffle Ingredients

  • Shredded Mozzarella cheese – 1/2 cup
  • 1 egg
  • 2 tbs of almond flour
  • .5 tsp of baking powder
  • Swerve to taste (I do 1-2 tbs)
  • Cinnamon to taste (I usually do about 1 tbs)
  • Mini Waffle Maker

Icing Ingredients (optional)

  • Swerve (Around 1-2 tbs) – you’ll need the confectioner kind
  • Water  (just a tiny bit)

Directions

  1. Add all the chaffle ingredients to a bowl and stir until well combined.
  2. Place some of the mixture into the mini waffle maker and spread into a thin layer that covers the entire bottom
  3. Cook each chaffle for about 1 min. It should make about 2.5 chaffles
  4. OPTIONAL: mix swerve and a tiny bit of water in a bowl to make icing and drizzle over your chaffles
